Uchu is the only Peruvian restaurant on Anguilla, set beside the emerald pool terrace at Belmond Cap Juluca on Maundays Bay. The restaurant features an elegant bar with deep green tones, black marble, and gold accents opening onto a terrace overlooking the Caribbean Sea. The menu is structured around three Peruvian ecosystems: The Coast, The Jungle, and The Andes, with a dedicated ceviche bar and raspadilla shaved ice station. Signature dishes include Ceviche Carretillero with fresh fish and tiger's milk, Ceviche Amazonico with heart of palm and plantain, Arequipa Hummus with chickpeas and walnuts, Crayfish Barclay Salad, Octopus Anticucho, Pescado a la Chorrillana, El Plato de San Juan flank steak, daily catch risotto, and ribeye. Desserts include Creme Brulee with purple corn pudding, Chocolate Bar and Guanabana, and Choco Finger with pisco ice cream. Bar cocktails include the Maunday's Mule and Paradise Passion.
