About Salt Restaurant (Four Seasons)
Salt Restaurant is the signature dining destination at Four Seasons Resort and Residences Anguilla, positioned on a dramatic blufftop promontory between Meads Bay and Barnes Bay. Reimagined and reopened in late 2025 by celebrated design studio Farouki Farouki, the 105-seat, 4,500-square-foot venue blends contemporary sophistication with Caribbean character. Custom furnishings in rusty neutrals inspired by Anguilla's coastal rock, textural plaster, teak accents, and layered lighting create a space that is bright and airy at breakfast, intimate and elegant at dinner. A chef's table anchors the dining room for private tastings and celebrations. Executive Chef Manu Calderon guides the menu daily around what the island provides: freshly caught seafood, warm spice, bright citrus, and restrained smoke. The dinner menu opens with starters including the Signature Salt Ceviche, Crayfish Rockefeller, Charred Avocado with local lobster, King Conch Salad, Oxtail Croquettes, Oysters with hibiscus, and a plant-based selection from local farmer Vinty's mystery box. Mains showcase Spiny Lobster (grilled or creole), a Caribbean Curry with local provisions and roti skin, Frutti de Anguilla house-made pasta, Half Chicken with jerk glaze and plantain, a 12oz Pork Chop with tamarind rum glaze, NY Striploin, 16oz Rib Eye, and the signature 24oz Cowboy Steak with dry jerk rub at $135. Sides are all $12 with creative choices including jerk cauliflower, yucca fries, fried polenta with moringa salt, and fresh seaside veggies.
