Pimms has been Anguilla most romantic and celebrated fine-dining restaurant since its founding in 1988. The flagship restaurant of Belmond Cap Juluca, it sits on an exclusive peninsula that juts into Maundays Bay, offering tables just feet from the turquoise Caribbean Sea. Moorish white arches contrast against the blue water, cream cushions rest on posh wooden chairs, and white tablecloths drape over tables lit by the dancing lights on the sea. Evenings at Pimms begin with the Pimms Ritual: guests are led to a limestone sink made of Anguilla stone for a cleansing hand ritual using local sea salt, lime juice, and coconut milk. Chef Justin Hughes blends French culinary artistry with Caribbean flavors. The current menu features Small Bites including lobster rolls and whipped cod roe, a Raw Bar with oysters, snapper crudo, lobster salad, Oscietra caviar, and a seafood tower, Starters including the legendary coconut lobster bisque, the tri-preparation Anguillian conch dish, local crayfish fettuccine with sea urchin butter and caviar, and oxtail tarte tatin, and Main Courses including red snapper, yellowfin tuna, grouper, spiny lobster, dry-aged rib eye, plantain and tannia gnocchi, and the Creole bouillabaisse en croute for two. Pimms holds the Wine Spectator Award and has a cellar of over 3,000 bottles. Signature cocktails include the Watermelon Spritz Coco and the Healthy.
